Poor Man’s Pizza – Carnivore’s Corner October 16, 2013

LowDown

Although I call this Poor Man’s Pizza, I mean no disrespect and I’m not being judgmental.  It’s just a fancy catch phrase for a quick lunch-like dish you can make in less than five minutes.  Be aware that you will need a toaster oven to pull of this culinary feat of excellence.

Ingredients:

1 crispbread cracker

1 oz. of cheese

2 slices of tomato

Preparation:

1. Place cracker face-up in toaster oven.

2. Layer the tomatoes on the cracker with the cheese on top.

3. Bake on medium to high heat until cheese is melted and you’re off to the races.

Tips of the Trade

Be careful taking this thing out of the oven.  I singed my hand once and it hurt like heck!

I’m 50% Italian and this quick-strike meal hits home with me due to the cheese and tomatoes.  I’ve toyed with different cheeses, but Provolone is definitely one of my faves.  Feel free to experiment with others like Swiss, mozzarella and feta.

Doctor Kracker and Back to Nature make awesome crispbreads that I use on a regular basis. The Pumpkin Seed Cheddar and Seedlander from Doctor Kracker are hard to walk away from.

If one of these doesn’t fill you up, two of them surely will!

Bennies

I have good news.  Poor Man’s Pizzas offer a terrific balance of protein, carbs and fat, and they also contain fiber, calcium and lycopene from the tomatoes.  Lycopene is a powerful antioxidant that has been known to promote prostate health.
